simple (no churn!) key lime pie ice cream

I made vanilla no churn ice cream last month and ever since I have wanted to experiment with a different flavor. So when I heard about a group of bloggers getting together for a week of ice cream recipes, I was all in!
It is the end of summer. I gather up allergist forms, make dentist appointments, and think about last minute “needs” like extra water bottles and sneakers for our two kids before they head back to school. Someday soon I will make this pie from scratch and mix it in the ice cream. But this busy Momma opted for easy. End of summer easy.
Key Lime Pie is one of my favorite desserts. Key lime juice is a pale yellow (vs regular lime juice) and hails from Key West, Florida. The pie is tangy, smooth, and sweet. Perfect on a hot summer day. My pie was store bought (thank you Harris Teeter!) but if you are in the mood to make it from scratch try this recipe from Smitten Kitchen.

No Churn Key Lime Pie Ice Cream
makes 1 1/2 quarts
2 cups (16oz) heavy cream
1 (14oz) can condensed milk
2 cups key lime pie, chopped to 1/2 inch pieces
1 teaspoon lime juice
1 drop green food coloring
extra graham crumbs and sanding sugar, optional
Directions
Whip whipping cream in mixer until peaks form. Gently fold in condensed milk. Mix together lime juice with food coloring and gently stir in cream mixture. Pour into bread loaf pan and freeze for 1 hour (until set), then stir in pie chunks. Freeze until firm, about 6 hours. Garnish with extra graham crumbs and sanding sugar.

The result is refreshing, sweet, tangy, and crunchy in all the right ways. The graham cracker holds its crunch well, and who doesn’t love eating chunks of pie in their ice cream?
Quick tips: leave room for the pie pieces when pouring in the cream mixture to your loaf pan. I used about 1/2 of a 9 inch pie when chopping up my pie pieces, and froze the pie pieces until I was ready to mix them into the ice cream.
